These were sooo easy to make! First I sliced an inch or so off the end of the bacon pkg. Then as the bacon pieces were cooking I found some pineapple chunks in juice in the fridge. :)
While the bacon was just a bit under done yet I tossed in a couple spoonfuls of brown sugar. This got nice and bubbly brown quickly!
Then I added most of the juice and the pineapple and cooked it down...
Simple and yes delicious!
I served it over vanilla ice cream in my favorite margarita glasses.
